Ingredients
- Serves 4
- 100g spelt
- 1 fennel, finely sliced
- ¼ celeriac, grated
- 1 apple, thinly sliced or julienned
- Small bunch dill, roughly chopped
Mustard vinaigrette:
- 1 ½ tbsp white balsamic vinegar
- 2 tbsp cold pressed rapeseed or olive oil
- 1 ½ tsp Dijon mustard
- 1 ½ tsp agave
- ½ tsp salt
Method
- Cook the spelt until tender but still nutty. Rinse in cold water and leave to drain.
- Combine the fennel, celeriac, apple and dill in a bowl.
- Separately whisk the dressing ingredients together until smooth.
- Combine everything in a large bowl.
