Fennel, celeriac and apple slaw

  • Serves 4
  • 100g spelt
  • 1 fennel, finely sliced
  • ¼ celeriac, grated
  • 1 apple, thinly sliced or julienned
  • Small bunch dill, roughly chopped

Mustard vinaigrette:

  • 1 ½ tbsp white balsamic vinegar
  • 2 tbsp cold pressed rapeseed or olive oil
  • 1 ½ tsp dijon mustard
  • 1 ½ tsp agave
  • ½ tsp salt

Method

  • Cook the spelt until tender but still nutty. Rinse in cold water and leave to drain.
  • Combine the fennel, celeriac, apple and dill in a bowl.
  • Separately whisk the dressing ingredients together until smooth.
  • Combine everything in a large bowl.
