For the apple puree:
- 4 apples
- 2 tsp. ground cinnamon
- 2 tbsp. maple syrup
For the brownies:
- 200g of the apple puree mixture
- 2 tbsp. chia seeds
- 400g can of black beans, drained and rinsed
- 200g ground almonds
- 200ml milk alternative (e.g. almond, hazelnut, soy)
- 2 tbsp. coconut oil
- 8 tbsp. maple syrup
- 7-8 tbsp. raw cacao powder
- 100g raisins
Method
Apple puree
- Decore and chop the apples into cubes (the skin can be left on)
- Place into a pan and fill with 2cm of water
- Heat slowly for 15 mins or until the apples are soft
- Mix the cinnamon and maple syrup into the stewed apple.
- Note: You will only need 200g of this mixture for the brownies, any excess can be stored in the fridge in a container for up to 5 days or can be frozen and is great mixed with porridge!
Brownies
- Preheat the oven to 180°C (fan 160°C).
- Soak the chia seeds in 140ml of water for 30 minutes.
- In a food processor, blend the apple puree, chia seeds, black beans, almonds, milk alternative, coconut oil, maple syrup and raw cacao powder until smooth.
- Stir in the raisins.
- Line a baking tin with grease proof paper and pour in the brownie mixture
- Bake in the oven for 40 minutes, or until mixture is cooked throughout.
- Leave to cool in the baking tin for at least an hour
- Cut into squares ready to eat!
- Tip: these delicious brownies can be stored in an air tight container for up to 5 days.
