Vegetarian – DAIRY-FREE
Ingredients (serves 4)
- 200g Puy lentils
- 1L hot vegetable stock
- 200g broccoli (tenderstem if available)
- 140g sugar snap peas
- 100g frozen peas
For the dressing
- 2 tbsp sesame or olive oil
- Lemon juice
- 1 chilli (deseeded) – optional
- 1 garlic clove, finely chopped
- 2 tbsp soy sauce
- 2-3 cm fresh ginger, grated
- 1tbsp honey
Method
- Boil lentils in stock (20min) and drain
- Boil vegetables for 2 minutes in water and drain
- Mix together dressing ingredients
- Combine lentils and vegetables and mix in dressing
