This recipe spices up your average banana bread loaf. This recipe contains no refined sugar and therefore is healthier than many banana bread recipes. The addition of maple syrup and nuts adds a lot and gives it a lovely texture, not to mention how soft and moist it is!

Maple nut banana bread recipe
Prep time: 5-10 mins Cooking time: around 50 mins Quantity: makes one large loaf
- 150g self raising flour flour
- 2 large eggs
- 3 bananas
- 100ml any type of milk
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 2.5 tbsp maple syrup
- sprinkle of cinnamon
- big handful of nuts, chopped (I went for walnuts, almonds and hazelnuts)
- some walnuts for the top (optional)
- Preheat the oven to 160 degrees fan and line a loaf tin with baking parchment/tin foil
- In a large mixing bowl mash the banana and then add the eggs
- In a separate bowl, mix all the dry ingredients
- Pour the dry ingredients into the wet mixture bowl and stir to combine. Then add the milk and stir again
- Pour the mixture into the loaf tin and top with the walnuts if using
- Place in the centre of the oven and cook for 50 minutes or until a skewer comes away clean. If your bread is colouring well on top but still needs more cooking time, put some tin foil on top to avoid it burning
It’s the perfect snack for anytime of day. You can also freeze it and take it out slice by slice to make it last. Hope you like this banana bread recipe!
