Vegetarian – DAIRY-FREE

Ingredients (serves 4)

  • 200g Puy lentils
  • 1L hot vegetable stock
  • 200g broccoli (tenderstem if available)
  • 140g sugar snap peas
  • 100g frozen peas

For the dressing

  • 2 tbsp sesame or olive oil
  • Lemon juice
  • 1 chilli (deseeded) – optional
  • 1 garlic clove, finely chopped
  • 2 tbsp soy sauce
  • 2-3 cm fresh ginger, grated
  • 1tbsp honey

Method

  • Boil lentils in stock (20min) and drain
  • Boil vegetables for 2 minutes in water and drain
  • Mix together dressing ingredients
  • Combine lentils and vegetables and mix in dressing
